Fructose from sugarcane juice is metabolised to fructose-1-phosphate; lack of hepatic Aldolase B blocks its cleavage, causing fructose-1-phosphate accumulation that traps phosphate, produces hypophosphatemia, precipitates severe hypoglycemia and hepatomegaly, and leads to fructosuria (reducing substances in urine)—the classic picture of hereditary fructose intolerance due to Aldolase B deficiency [Choi et al., 2012, PMID 22375183; Yang et al., 2000, PMID 11021009].
