Yogurt is usually well tolerated in lactose-intolerant people because the live bacterial cultures supply β-galactosidase, which partially digests lactose in the intestine; milk (skimmed or condensed) and ice-cream all contain unfermented lactose and commonly provoke symptoms in such patients [Kolars 1984, PMID 6417539; Savaiano 1987, PMID 3553256].
